Amazingly yummy, pumpkin and grain-free, high protein brownies!
15oz can of organic garbanzo beans, rinsed and drained
1/2 cup pure pumpkin purée
2 egg whites
1/4 cup Waldens farm syrup or organic honey
1/2 cup vanilla protein powder
1/2 cup baking stevia
1 tsp pumpkin pie spice
1/2 tsp cinnamon
1/2 tsp baking powder
Dark chocolate chips for a topping if you wish (I did half and half just to see the difference!)
1. Heat oven to 350 and blend all ingredients in blender. Spray 8×8 pan with non stick spray (I use grape seed oil) and pour batter into pan.
2. Bake for about 30-35 minutes or until knife/fork comes out clean.
Makes 9 brownies!
